Ingredients:

12 oz Wacky Mac®® Veggie Spirals
1 Tbsp olive oil
1 small onion, chopped
1 cup (about 8 oz.) sliced fresh mushrooms
1 lb boneless skinless chicken thighs (1-1/2 lb), cut into bite-size pieces
1 can (28 oz.) crushed tomatoes
1/2 tsp dried oregano leaves, crushed
1/2 tsp salt
1/4 tsp ground black pepper

Cooking Directions:

1. Prepare Wacky Mac® according to package directions.  Heat oil in large nonstick skillet. Add onion and mushrooms and cook for 5 minutes over medium heat.

2. Remove vegetables and set aside.

3. Add chicken to skillet and brown for 2 minutes per side. Add canned tomatoes to skillet and scrape up any browned bits.

4. Return vegetables to skillet. Stir in oregano, salt and pepper.

5. Reduce heat to low. Simmer for 10 to 15 minutes, stirring occasionally, or until chicken is cooked.

6. Stir in cooked Wacky Mac® and heat through.
