Ingredients:

12 oz Wacky Mac®® Veggie Bows
1 Tbsp canola oil
1 each garlic clove, minced
2 tsps fresh ginger root, grated
1 cup red onion, chopped
1 small red bell pepper, diced
1 lb boneless skinless chicken breast, cut into strips
1 cup chicken broth
1 Tbsp dried apricots, sliced
1 Tbsp apricot jam or preserves
1/4 tsp ground cumin powder
1/4 tsp salt
1/4 tsp ground black pepper, divided
1/8 tsp ground red pepper (cayenne)
1 cup chicken broth

Cooking Directions:

1. Prepare Wacky Mac® according to package directions.  Heat oil in 12-inch nonstick skillet over medium heat.

2. Add garlic, ginger-root, onion and bell pepper. Cook for 5 to 10 minutes, stirring occasionally, or until vegetables are tender.

3. Add chicken. Cook for 3 minutes, stirring frequently, or until lightly browned. Pour in chicken broth and scrape up browned bits.

4. Add apricots, apricot fruit spread, cumin, salt, pepper and cayenne pepper. Reduce heat to low and simmer for 5 minutes.

5. Stir in cooked Wacky Mac® and simmer 5 minutes longer to heat through.

Note: Turkish-style apricots are plump and sweet tasting.
