Ingredients:

2 tsps olive oil
1 each garlic clove, minced
1 cup onion, thinly sliced
1 lb large shrimp, peeled and deveined
2 each tomatoes, cored and chopped
1 tsp dried oregano leaves, crushed
1/2 tsp salt
1/4 tsp ground black pepper
1 tsp lemon zest
12 oz Wacky Mac®® Veggie Spirals
2 tsps lemon juice
1 cup reduced-fat feta cheese, crumbled

Cooking Directions:

1. Heat oil in large nonstick skillet. Add garlic and onion.

2. Cook over medium heat 5 minutes. Add shrimp. Cook for 2 minutes, stirring frequently.

3. Add tomatoes, oregano, salt, pepper and lemon rind. Simmer for 5 minutes or until tomatoes are pulpy and shrimp is completely cooked.

4. Meanwhile, cook WACKY MAC according to package directions. Drain.

5. Stir WACKY MAC into shrimp mixture. Stir in lemon juice and feta cheese. Stir gently but well.

6. Serve garnished with lemon wedges if desired.
