Ingredients:

12 oz Wacky Mac®® Veggie Spirals
2 cups fresh basil leaves, chopped
2 each scallions, finely chopped
2 Tbsps pine nuts
1 tsp finely grated lemon zest
1 Tbsp fresh lemon juice
2 each garlic cloves
1/2 tsp salt
1/4 tsp ground black pepper
1/2 cup low sodium chicken broth
1/3 cup shaved Parmesan cheese
1/4 cup sun-dried tomatoes (not in oil), cut in thin strips

Cooking Directions:

1. Prepare WACKY MAC according to package directions.

2. Drain and return to pot. 

3. While WACKY MAC is cooking, place basil, scallions, pine nuts, lemon rind, lemon juice, garlic, salt, pepper and 1/4 cup chicken broth in blender container.

4. Puree, scraping down sides of container.

5. Add remaining 1/4 cup chicken broth and blend at high speed for 30 seconds.

6. Spoon pesto into cooked WACKY MAC and stir well over low heat.

7. Arrange shaved Parmesan cheese on top. Garnish with sun-dried tomato strips.
