Ingredients:

2 Tbsps margarine
1 small onion, chopped
2 Tbsps flour
2 cups half and half
1/2 cup reduced-fat feta cheese, crumbled
1/2 cup crumbled blue cheese
4 cups fresh spinach leaves, coarsely chopped
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp dried oregano leaves, crushed
1/4 cup Italian style bread crumbs
12 oz Wacky Mac®® Veggie Bows

Cooking Directions:

1. Cooked according to package directions.
2. Melt margarine in large heavy-bottomed pot. Add onion and cook over medium heat 5 minutes. 

3. Stir in flour until absorbed. Add half-and-half, a small amount at a time, stirring constantly until mixture is slightly thickened.

4. Reduce heat to low. Add feta and blue cheese and stir until cheeses melt. Stir in spinach, salt, pepper and oregano. Simmer 5 minutes or until spinach cooks down.

5. Stir in WACKY MAC. Spoon WACKY MAC mixture into lightly greased 2-quart baking dish.

6. Sprinkle on breadcrumbs. Bake in preheated 350-degree oven for 20 minutes or until casserole is bubbling and crumb topping is lightly browned.
