Ingredients:

12 oz Wacky Mac®® Veggie Bows
1 lb cooked pork tenderloin, cut into bite-sized pieces
2/3 cup chopped red onion
1 1/2 cups fresh mango, diced
2 Tbsps fresh lime juice
1 medium jalapeño pepper, seeded and finely chopped
2 Tbsps fresh cilantro leaves, chopped
1/4 tsp salt
1/4 tsp ground black pepper
1 cup lime wedges, for garnish

Cooking Directions:

1. Prepare Wacky Mac® according to package directions and rinse under cold water.
2. In a large salad bowl, add cooked Wacky Mac® and cooked pork.

3. In a small bowl, combine onion, mango, 2 tablespoons lime juice, chile, cilantro, salt and pepper. Mix well.

4. Taste and add remaining lime juice if desired.

5. Gently stir mango salsa into pasta mixture.  Garnish salad with cilantro and lime wedges.
