Ingredients:

12 oz Wacky Mac®® Veggie Bows
1 small Japanese eggplant, halved lengthwise and widthwise
1 small red bell pepper, quartered
1 small green bell pepper, chopped
1 small red onion, cut into wedges
1 each garlic clove
1 large fresh sprig of thyme
2 Tbsps olive oil, divided
1/2 tsp salt
1/8 tsp ground black pepper
2 oz smoked Gouda cheese, shredded

Cooking Directions:

1. Prepare Wacky Mac® according to package directions.

2.  Place eggplant, red bell pepper, green bell pepper, onion and garlic in fine-mesh basket for grilling.  Add thyme sprig. Brush vegetables and thyme with 1 tablespoon olive oil.

3. Season with 1/4 teaspoon salt. Grill until vegetables are fork tender, turning over once.

4. Remove and allow vegetables to cool to room temperature. Cut into bite-size pieces.

5. Squeeze garlic from its peel and mash to a paste.

6. Place vegetables and garlic in large salad bowl.

7. Add cooked Wacky Mac®, remaining 1 tablespoon oil, remaining 1/4 teaspoon salt and pepper.

8. Toss gently but well. Stir in cheese. Toss again.

Note: Vegetables may be roasted instead of grilled. Prepare vegetables as directed. Place in large roasting pan. Add thyme sprig or ¼ teaspoon crushed, dried thyme. Drizzle with 1 tablespoon olive oil and season with ¼ teaspoon salt. Roast in preheated 400-degree oven for 30 to 40 minutes, stirring occasionally. Aged Gouda cheese is available in the bulk cheese department of supermarkets.
